Coffee, Coffee Cake & Zucchini Fritters

Today I'm making up for lost time & posts.

The sudden loss of a friend, being a little bit under the weather and some computer issues put me behind on my Friday posts.  I hope to catch up today with these three offerings: Coffee, Coffee Cake, Zucchini Fritters

Another passion of mine, is freshly ground and brewed coffee beans.   I have an older model Capresso grind and brew that does just that: grinds & brews delicious coffee. It gives you options for the size of the grind, the number of cups to make (from 2 to 10), and the strength of the brew; mild, medium or bold. I've listed the newer version. Macy's online also has this model, and sometimes offers 10% off (as of today - Feb. 17th) 10% off of their price of $199 is offered).

If you only need a burr grinder, I recommend the Capresso Burr Grinder. It is a flat burr grinder, not a conical one(more expensive), but is a good entry level grinder.  If you do a Google search you'll find info on the difference. My method of brewing in this drip coffee maker is to use very cold water. For 4 cups, fill the pot to 4 1/2 mark. If you don't have a grind and brew, measure out 1/4 cup coffee grinds. Save some trees and buy a gold cone filter, you can empty, wash and reuse. Amazon has several to chose from, here is one example:

                                                                

King Arthur Sour Cream Coffee Cake

If you've ever had Boston Coffee Cake, it is a coffee cake worth craving. I found a coffee cake recipe that just about matches the taste and texture of the Boston Coffee Cake.  The recipe makes one large loaf, or one bundt pan size cake. I used my older Nordic Ware large loaf pan, and my brand new Chicago Metallic Ribbon loaf pan. Both are non stick.  I used Baker's Secret spray on each to be sure the coffee cakes came out properly, and they did!  The other new gadget I got was a Kitchenaid Artisan Mixer in Onyx Black. Kitchenaid is offering a $30 rebate until March 24, 2012.





                                                                       









                                                                    


Zucchini Fritters

Using my Presto Salad Shooter, I grated the zucchini and the extra sharp cheddar cheese. Using my immersion blender, I whipped up the eggs. Amazon did not have my model, so I posted a comparable. Once again, I used one of my great cast iron skillets to fry in, 10 inch.
